What I am into Wednesday - Instant Pot

I am considered a minimalist by my family and not one to collect anything let alone a kitchen gadget.  I have a slow cooker, which I love, and thought I had no need for another cooker gadget.  That was until I met the Instant Pot.

The Instant Pot is a 7-in-1 pot that is a slow cooker, pressure cooker, rice cooker, yogurt maker, sauté pan and steamer.  It is the ultimate gadget of convenience especially for the person who is trying to make real food a priority and is short on time.

I make a ton of bone broth and because it is a multiple day process, I feel like I always have some going.  There are days that I want to make dinner in the slow cooker but can't because I have broth going.  What finally sold me on the Instant Pot was that the broth only takes 2 hours - it could be part of my Sunday cook up.  

Not only does it only take 2 hours but it actually turns out better.  Truth time - I have never made chicken broth that gels even when using chicken feet.  My chicken broth finally turns to gelatin in the refrigerator with the Instant Pot

It doesn't just make great broth.  One of my favorite slow cooker recipes is Kalua Pig by Nom Nom Paleo.  This is a 16 hour recipe that is melt in your mouth amazing (if you have never made it - go and get yourself a pork roast and do it, it is that amazing!).  The Instant Pot reduces this recipe to 2 hours and gives you the ability to cook up the bacon right in the cooker without dirtying another dish because it has a sauté feature.  Amazing!

I haven't used all the features yet but I already feel like I have gotten my money's worth.  The Instant Pot is a gem and I think every hard-working kitchen cook needs one to make real food cooking just a little bit easier!
