Another Reason to Eat Your Vegetables

Every cell in the body requires potassium and it is lacking in the Standard American Diet.  Many Americans live on highly processed and sugar rich foods.  These foods contain high amounts of sodium that only increases our requirement for potassium, making us even more deficient.  Signs of potassium deficiency include muscle cramps, weakness, palpitations, and malaise.

Plants are your best sources of potassium; dark leafy greens, sweet potatoes, squash, mushrooms and avocados.  Salmon and nuts and seeds are also significant sources.  Potassium rich diets are associated with less risk of high blood pressure but that doesn’t necessarily mean that potassium causes this benefit.  Usually people who eat a potassium rich diet eat less sodium filled foods that can also be associated with this health benefit.  Just another reason to eat your vegetables and leave the processed crap at the grocery store!
